Breakfast Burrito

Mornings in a busy house can seem overwhelming at times. You are running behind schedule, the kids are not cooperating, and everyone seems to be in a hurry. These can be days when making breakfast just doesn't seem possible.
Here is a simple way to make breakfast ahead of time, so all you need to do is pop it in the microwave, heat and go.
Here are the tools you will need:
A bowl
Whisk or fork
Fry pan with a lid
Spatula
Ingredients:
Eggs
Bacon bits
dried minced onion
shredded cheese
honey mustard
flour tortilla
salt and pepper (optional)
cooking spray or butter
Directions:
To your frying pan, add your cooking spray or butter. Warm it, but don't overheat. If you are using butter, let it melt, then add your bacon bits. Warm them over medium heat and watch carefully.
In a bowl, crack your eggs and add a small amount of water or milk, approximately 1/2 teaspoon. Whisk your eggs and water together to ensure they are well incorporated. Sprinkle the minced onion into your egg mixture, stir, and then pour over your bacon bits.
Cook over medium heat, stirring frequently to avoid scorching your eggs.
When your eggs are cooked to the desired stage, remove from the heat and sprinkle your cheese on top. Cover with a lid and let your cheese melt.
While your cheese is melting, heat your tortilla. You can use another frying pan, microwave, or if you have a gas stove, you can warm right over the flame. Be careful not to burn yourself.
When your tortilla is warmed, place it on a plate, add your eggs to the tortilla, season with salt and pepper if you like, add the honey mustard, wrap, and enjoy.
Alternative ingredients:
Ham, sausage, steak, chives, mushrooms, tomatoes, cooked hash brown potatoes
You can make these a few days ahead, store them in the refrigerator or the freezer in an air-tight container or zipper bag. If you store them in the fridge, they will keep approximately 3-4 days, and if you choose to freeze them, 2-3 months.
If you choose to freeze them, take them out of the freezer the night before you want to eat them, let them thaw in the refrigerator overnight, and then reheat in the morning.
Tips:
If you are planning to take your burrito with you to eat later, for instance, when you get to work, wrap it in a paper towel. You can either take it hot or reheat in a microwave when you get to work. The paper towel will absorb any condensation or moisture from the steam and help keep your tortilla from getting soggy. The paper towel also doubles as a plate and a napkin.
