Creamy Cucumbers

I will be the first to admit that I had never heard of "Creamy Cucumbers" before I moved to Minnesota. We used to go visit my husband's grandparents, and it didn't matter what time of day you went to visit, Grandma Sylvia would always serve you something to eat. They would have "lunch" at ten in the morning, and the noon meal would be called dinner, then when you ate in the evening, that was supper. It took me many years to get that straight.

One of the dishes you could always count on during the summer were creamy cucumbers. The way grandma made them was with vinegar. That was a long time before I knew how good vinegar is for you and I didn't use it too much to cook with.

Here is the recipe I created for creamy cucumbers.


Ingredients

Peeled and sliced cucumbers

1/2 cup of sour cream

2 tablespoons of mayonnaise

2 tablespoons of Miracle Whip

1/4 cup granulated sugar

1/2 teaspoon lemon juice

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup of milk



Directions:

Combine the sour cream, mayonnaise, Miracle Whip, sugar, lemon juice, salt, pepper, and milk in a bowl. Whisk the ingredients until the mixture is smooth and creamy. Add the sliced cucumbers and mix to blend thoroughly.


Store in a covered dish and keep refrigerated.
