Dinosaur Eggs

Supper time was always very important to me. It was a time when everyone sat down at the table, and we talked. Got caught up with whatever had happened that day, talked about plans for the next day, and just really connected as a family.
When the kids were young, their dad was often away, working long hours, sometimes even 6 days a week. It was challenging to make meal times feel special, so I thought that being creative with meals might make it a bit better.
This is where "Dinosaur Eggs" came in. I know, silly, right? Well, it made a memory.
Recently, I was asked to make these again. Here's the recipe that added a bit of fun to supper time.
Tools needed:
Baking Sheet
Cooking spray or parchment paper
Fry pan
Sauce pan
Spoon
Knife or pizza cutter
Rolling pin
Pastry brush
Ingredients:
1 pound of ground beef
1 box of beef-flavored Rice-A-Roni
1/2 small onion - finely chopped
1 package of puff pastry (2 sheets)
1 egg
Directions:
Prepare the Rice-A-Roni according to the box directions (or look for my homemade version in the recipe section of Momma O's website).

Brown the ground beef in a frying pan. Once the meat is cooked, drain the excess fat. Return to the frying pan and add the finely chopped onion, and cook until tender.

Add the prepared Rice-A-Roni to the meat mixture, stir to incorporate. Set aside.


Defrost a sheet of puff pastry as instructed on the package, then use a rolling pin to roll it out.


With a pizza cutter or knife, slice the puff pastry into 8 square pieces.

Put some of the meat mixture in the center of each square and wrap it into an oval-shaped ball. Place it seam side down on the prepared baking sheet.




In a small bowl, breat the egg, and then brush it on using a pastry brush.


Bake at 400° F for 15-20 minutes or until golden.

Serve on a bed of the pasta, rice, and ground beef mixture.


Notes:
The leftover meat mixture can be frozen,
You can cut the recipe in half and only make 8 if needed.
You can freeze the "Dinosaur Eggs" if needed. Using parchment paper, place the prepared Dinosaur Eggs on a baking sheet, place in the freezer, and freeze for at least 4 hours. When completely frozen, place into freezer safe bags. These will keep approximately 3 months.
