Egg Frittata

Monday mornings often feel more chaotic compared to other mornings. This is likely because it's the start of the work week, and I'm attempting to settle back into a routine after a leisurely weekend. Breakfast tends to be a struggle for me most mornings, typically delaying me by about 15 minutes, which can determine whether I arrive early, on time, or even late to work.
This weekend, I chose to get a head start by preparing my breakfasts for the entire week in advance.
Egg Frittatas are similar to mini omelets that are easy to carry and taste great on their own or on an English muffin. You can prepare them with any combination of vegetables, meats, and cheeses, or enjoy them plain.
They are simple to prepare, can be portioned in various sizes, store well in the refrigerator, and reheat efficiently in the microwave.
Ingredients:
Eggs
Bacon bits
Shredded cheese
Onions
Sweet peppers
Mushrooms
Milk
Salt and Pepper

Directions:
Preheat the oven to 350°F.
Begin by finely chopping your vegetables

Combine the eggs and milk in a bowl and whisk thoroughly to blend them together.



Then, incorporate the vegetables and bacon bits, stir well to combine.

Spray the muffin pan(s) with cooking spray

Use a scoop or spoon to transfer the egg mixture into the muffin pan. This method ensures better distribution of the veggies compared to pouring, which can lead to uneven distribution.
Sprinkle the shredded cheese on top(not pictured)

Cook in the oven at 350° for 20 minutes.

Allow to cool fully and keep in an airtight container in the refrigerator for up to 4 days, or freeze for up to 2 months.

Notes:
In this recipe, I used:
8 eggs
1/2 cup of milk
1 cup of bacon bits
1 cup of shredded cheese
3/4 cup of chopped onions
3/4 cup of chopped sweet peppers
3/4 cup of minced mushrooms
These amounts yielded 18 Frittatas.
You can add any chopped vegetables or meat you like, or leave them plain. If you use pork sausage or any other sausage (turkey, chicken, etc.) make sure to precook the sausage to the appropriate internal temperature to avoid potential issues.
