Fantastic Tempura Batter

Remember the last time you were at your favorite restaurant and ordered the perfect batter fried chicken or fish? My mom made the best "beer batter" I had ever had, and I have tried for years to replicate it. I think I've come as close to hers as I can. The only thing that is missing is her loving touch.


Tools needed:

A large bowl

Measuring cups and spoons

Whisk


Ingredients:

1 cup all-purpose flour

1/8 cup corn starch

1 teaspoon sugar

1 teaspoon salt

1/4 teaspoon baking soda

1/4 teaspoon onion powder

1/4 teaspoon paprika

1/8 teaspoon black pepper

1 cup club soda, lemon-lime soda or your favorite beer


Directions:

In a large bowl, whisk together the flour, cornstarch, sugar, salt, baking soda, onion powder, paprika, and black pepper. Ensure that all ingredients are thoroughly incorporated and there are no lumps. Pour your club soda, lemon-lime soda, or beer over top of the dry ingredients and whisk well, again making sure there are no lumps.


Your batter is now ready to use.



This batter is very versatile. It can be used on fish, chicken, pork, turkey, beef, potatoes, onions, and almost any other food you want to deep-fry. I have even used it on pickles.


Notes:

The club soda adds a neutral flavor, whereas the lemon-lime soda gives a hint of sweetness, and the beer adds a more savory touch.

For a deeper flavor, try smoked paprika. If you want to add some kick, try a little red pepper flake or cayenne pepper for a spark.
