Grandma O's Meatloaf

It seems to me that while anyone can make a meatloaf, not everyone can make a "good meatloaf." There are two women I know or knew who truly succeeded in making a good meatloaf. One was my mom, and the other is my mother-in-law. I've only been fortunate enough to have one recipe written down, and it's this one: Grandma O's Meatloaf.
It's quite good, with a unique twist—ginger. This is the only meatloaf recipe I've come across that includes ground ginger.


Ingredients:
1 1/2 pounds of ground beef
2 eggs
3/4 cup crushed crackers
1/2 of a medium onion, chopped finely
3/4 cup of milk
1/4 teaspoon of ground ginger
1/2 teaspoon salt
1 teaspoon black pepper
1/2 cup brown sugar
1/2 cup ketchup

Directions:
Preheat the oven to 350 °F.
Combine the ground beef, eggs, crackers, milk, salt, and black pepper in a mixing bowl. Mix thoroughly until well combined. Transfer the mixture to a loaf pan and form it into a loaf shape.


In another bowl, combine the ketchup and brown sugar. Drizzle this mixture over the meatloaf.

Put in the hot oven and bake for 1 hour. Allow to rest for 10 minutes, then slice and serve warm.
