Momma O's Lazy Day Pasta

I know I am not alone when I say there are days that just nothing sounds good for a meal. That is when my "go to" recipe for me is a "given".
I will be the first to admit that this is a meal I enjoy; neither my kids nor my husband enjoy it, and that is okay - to each their own. However, for me, I could eat this anytime.
The beauty of this recipe is that there really isn't a recipe, it's what would be described as "to taste", which means you add as much of each ingredient that you want. You can add anything you like to it. This is how I make it, but again, you can add any meat or no meat, a lot of vegetables or not as many. It completely customizable to your preferences. I will add approximate amounts to yield 1 serving.
Ingredients:
10 slices of Pepperoni
6 slices Hard salami
1 cup fresh Broccoli
1/2 cup Mushrooms
1/2 medium Onion, chopped
1 tablespoon Olive oil
1 teaspoon Garlic powder
Cooked pasta (anything you like)
2 teaspoons Parmesan cheese
1/2 cup Squash (optional )
1/2 cup Bell pepper (optional)

Instructions:
To a fry pan add some olive oil, the approximately 1 tablespoon olive oil. Heat over medium heat. Add the onions, pepperoni, mushrooms, hard salami, cook over medium heat until the onions are tender. Add the rest of the vegetables and garlic. Cook over low heat until the vegetables are tender

Put the cooked pasta on a plate.

Add the cooked meat and vegetables on top of the cooked pasta

Add the parmesan cheese

Serve warm.
Notes:
You can make as much or a little as you want, any leftovers can be frozen.
Tips:
Leftover pasta from another meal like spaghetti can be frozen. To re-heat, add the frozen pasta to a kettle of boiling water, turn off the heat and let the pasta sit for5-10 minutes, drain and serve.
