Amazing Banana Nut Muffins

I've tried making muffins with box mixes, mixes from plastic bags, and homemade recipes from various cookbooks and online sources, but none have matched the quality of this particular recipe. Needless to say, this has become my "go-to" recipe.
This is seriously easy, and if you do any amount of baking, there is a good chance you have everything you need to make these fabulous muffins.
Ingredients:
1 cup all purpose flour
1/2 cup whole wheat flour (You could use 1 1/2 cup all purpose flour without any whole wheat flour if you’d like)
1 1/2 teaspoon baking soda
1/4 teaspoon salt
1/8 teaspoon nutmeg
1/8 teaspoon cinnamon
1 stick salted butter (1/2 cup), melted
3 large ripe bananas mashed
1/2 cup sugar
1/4 cup dark brown sugar packed
1/4 cup milk
1 large egg
1 teaspoon vanilla extract
3/4 cup – 1 cup walnuts (optional)

Directions:
Preheat oven to 350°F.
In a large mixing bowl, combine the flours, baking soda, salt, nutmeg, and cinnamon by whisking them together. Set the mixture aside.

Melt butter. Set aside.

In another mixing bowl, use a fork to mash the bananas.

Add butter, both types of sugar, milk, egg, and vanilla, stirring until the mixture is well combined.


Fold in half of the walnuts

Combine wet ingredients into dry ingredients. Stir until just combined – do not over mix.


**Spoon batter evenly into 12 greased or paper lined muffin cups.

Crush the remaining walnuts (if using) and sprinkle over the top of the muffins.
Bake for about 22 – 26 minutes or until muffins are golden brown and a toothpick inserted into the center comes out clean.
Let the muffins rest in the pan on a wire rack for 5 minutes. Afterward, remove them from the pan and allow them to cool completely on the rack.
Notes:
**The recipe claims it will produce 12 muffins, but whenever I've made it, I've ended up with significantly more. I assume the original recipe is intended for large muffin tins, rather than the standard size.
In the images, I've made the recipe in double quantity. I had a surplus of bananas that needed to be utilized, which is why there are more than 12.
