Baked Cinnamon Doughnuts

I've previously mentioned Reva Jackson, the amazing woman who provided me with my first job in her restaurant.
Besides the delightful homemade pies she prepared, Reva was in the kitchen daily crafting fresh glazed raised doughnuts, and I must say, I seldom started a school day without having one of Reva's doughnuts for breakfast.
As I've gotten older and recognized that having a deep-fried doughnut for breakfast might not be the healthiest choice, I decided to try baking doughnuts myself.
This is one of the recipes I follow to make these incredibly simple cinnamon doughnuts.
Ingredients:
2 cups all-purpose flour
1 1/2 cups white granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 egg large
1 1/4 cups whole milk
2 tablespoons butter melted, unsalted
1 tablespoon vanilla extract
Topping:
1/2 cup butter,melted
1/2 cup white granulated sugar
1/2 teaspoon ground cinnamon

Directions:
Preheat oven to 350° F and spray donut pans with nonstick spray.

Combine dry ingredients and set aside.


Combine wet ingredients and gradually add dry ingredients until just combined.





Spoon batter into pans, filling just over 3/4 full.

Bake 14-15 minutes. Allow to cool for 5 minutes before removing.

While they are cooling, combine cinnamon and sugar for your topping, and melt the butter in the microwave.


Lightly dip each donut in butter, followed by the cinnamon and sugar mixture, and serve warm.




Notes:
The batter is sweet, so try them first before coating them with more cinnamon and sugar.
These are certainly best enjoyed right away while warm.
